Chicken in Puff Pastry

 

Serves 4 as a main course

What you need:

3 boneless skinless chicken breasts

1 package Boursin cheese

1 sheet of frozen puff pastry (the usually come in packaged of two sheets defrost one sheet, keep the other frozen)

Garlic powder (optional)

1 egg (for a wash over the pastry)

Cookie sheet lined with parchment paper

What you do:   Preheat oven to 400 ° F.   Break egg in a bowl, beat it breaking yolk and set aside.   Cut chicken breasts into two inch pieces (try to keep them roughly the same size so they cook evenly)

Then:   Roll out the pastry sheet to measure approximately 10x15 (it needs to be big enough to give you room to fold it over and encase the chicken pieces)

Now:   Spread half of the chicken pieces on the puff pastry, sprinkle with garlic powder to taste.   Evenly crumble the cheese over the chicken, top with the rest of the chicken.  

Finally:   Brush the edges of the pastry with the egg wash.   First fold the short ends over the chicken, press down.   Fold the long ends over and pinch the pastry together.   Making sure the chicken mixture is encased in the pastry.   Transfer (using a spatula or two) on to the cookie sheet (for easier clean up you can put a piece of parchment paper down…but don’t stress if you don’t have any).   Brush with more of your beaten egg and bake until the pastry puffs up and browns nicely.   Some of the cheese make seep out, but don’t worry.   That will be a sign that the chicken is cooked, at least a ½ an hour maybe a bit more.
