Chocolatey Chocolate Cupcakes 101

Who doesn’t like chocolate cupcakes? I think the answer is almost no one. And Momma Hen has found you the easiest chocolate cupcake recipe there could possibly be and I don’t mean one that comes out of a box.   Sorry Betty, Duncan and even Ghirardelli (my favorite out of the box mix).   This recipe is courtesy of Stephanie Hersh.   Stephanie contributed this recipe to a posh Chocolate book called “The Essence of Chocolate.” These little chocolate delights are delicious and easy so the next time you want something chocolaty give these a go.   Momma Hen, says you will not be disappointed!

What you need:

1-cup all-purpose flour

½ unsweetened cocoa powder

10 tablespoons unsalted butter at room temperature

¾ cup granulated sugar

½ teaspoon baking soda

1/8-teaspoon baking powder

1/8-teaspoon salt

1 large egg

¾ cup whole milk

Cupcake pan and paper liners, or a flat cookie sheet and foil liners (they can stand on their own)

Hand mixer with beaters

How you do it:

Pre heat oven to 350 ° F, position rack in the middle of the oven.

Then:   Sift the dry ingredients together in a bowl and set aside.   In a bowl, combine the butter, sugar, baking powder, baking soda and salt, and then beat until light and fluffy.   Scrape down the sides of the bowl as necessary. 

Now:   Add the eggs and beat until incorporated, then add the flour mixture and milk alternating and continuing to scrape the bowl down.   Mix until the batter is a uniform color.  

Finally:   Fill cupcake liners 2/3 full and bake 15-20 minutes or until the centers spring back when touched.   Let cool completely before frosting.

Just in case:  you want to make a cake?  Don't use this recipe.  It is almost too rich and dense for a large round cake…trust me I tried it!

 

Chocolaty Chocolate Frosting

What you need:

1-cup heavy cream

8 oz semi sweet chocolate pieces

How you do it:

Heat the cream in a small saucepan over low heat until it just begins to simmer.

Then:   Add the chocolate and stir until the pieces are melted and the mixture is shiny.

Now:   Cool for a few hours until the frosting (ganache) thickens.

Finally:   Dip the cupcakes into the thickened frosting or use a knife to spread a small amount on each one and let sit until firm.
