French Toast with a Twist

Sometimes French toast can be really dry. This recipe is a bit more sophisticated than just eggy bread and depending on how fancy you wanted to get, you could serve it for dessert topped with ice cream or Nutella. Instead of just mixing a bunch of eggs with milk, you are making more of a custard to soak the bread in and then cooking it on a griddle or in a frying pan.
Around Christmas time when eggnog hits the shelves, use that to soak the bread in for a change (it’s easier too, just pour the eggnog over the bread).
Whatever type of bread you choose to use, make sure it is on the thick side like a Brioche, Challah or thick Texas toast slices. Don’t use whole wheat or grain bread, this recipe is nothing to do with being healthy, it’s just yummy and you want bread that will soak up the custard.
There are several variations so you don’t just have to have it for breakfast. This is a good use for stale (not moldy) bread. You could even make extra slices and freeze them for another morning.
What you need:
6 extra large eggs
¾ cup (6 oz or 175ml) of whipping cream
¼ cup (2oz) of sugar
2 tablespoons (25ml) of orange juice
1-teaspoon (5ml) vanilla extract
¼ teaspoon (or sprinkling) cinnamon
1 loaf of thick sliced white bread (or Brioche)
Several tablespoons of butter for cooking the toast
Maple syrup and powdered sugar to serve
How you do it:
In a large bowl whisk eggs until well blended. Whisk in sugar, cream, orange juice and vanilla. Soak bread slices in the custard mixture.
Then: Heat up a flat griddle pan or large frying pan on medium/low heat; spread enough butter on surface to coat. Remove the bread from custard mixture, shaking off any excess.
Now: Cook for approximately 4 minutes per side until golden brown and firm not squishy to touch. Repeat with remaining slices. Serve with maple syrup and powdered sugar on side
Just in case: You need a dessert? Slice up some strawberries and throw them on top with a little whipped cream. Spread Nutella on the toasts, cover with sliced bananas, and or vanilla ice cream.
