Breakfast Pizzas

These are great little pizzas for the morning or lunch time too. I copied the idea from Mickey Mouse and one of his restaurants in Disney World. The key is the garlic powder. It gives that little extra punch and flavor, so don't omit it. If you can't find flatbreads use pita's. Either way, they are delish!
Serves 2
Time it takes to make: 40 mins
What you need:
2 Flatbread wraps
4 extra large eggs
6 slices of strip bacon
2oz or ¼ cup shredded mozzarella cheese
Garlic powder
2 tablespoons (1oz or 30g) of softened butter or Smart Balance for pizzas
1 tablespoon (1/2 oz or 15g) of butter for eggs
How you do it:
Pre-heat oven to 425 ° F (220 ° C or Gas Mark 7).
Cook bacon in a frying or grill pan, when it crisps up remove from pan and drain on paper towels. When the bacon is cool enough to handle, cut or break up into bite size pieces.
Then: Make the scrambled eggs. Beat eggs in bowl with a fork until well blended. Melt 1 tablespoon of butter in a small frying pan over low heat (you can use the same pan you cooked the bacon in, just drain off the grease – not down the sink, in a HEAT proof – like Pyrex - container if the grease is still hot). Add eggs to pan and stir/scramble until cooked, scrapping them as you go. The eggs need to be firm, not dry and not runny. Set aside.
Now: You’re ready for the pizza part. Spread flatbreads with butter, place on cookie sheet (if you don’t have one, put a piece of aluminum foil on a rack in the oven and put the “pizza” base directly on that) and bake in oven until firm and just beginning to brown slightly – 3-5 minutes. Remove and sprinkle with garlic powder. Divide eggs between pizzas, top with bacon pieces and sprinkle each one with mozzarella cheese.
Finally: Return to oven and bake for approximately 7 minutes, until the cheese has melted and edges of pizzas are turning brown.
Just in case: Substitute bacon for breakfast sausage if you like. Ciabatta bread or baguette cut in half, lengthwise. Bagels or English muffins work too. Add mushrooms, tomatoes or onions. Anything, really, that you like for breakfast or lunch.
