Shrimp Salad - for when you are tired of tuna or egg salad


This is quick and easy and a nice switch from tuna or egg salad.  You can usually find pre cooked shrimp in the grocery store, so use that if you don't have the time to poach it yourself.  There's a hint of spice with the Tabasco sauce.  Don't worry it's not too hot.  The dill is key and a nice traditional taste with seafood.  Scoop a bunch on a baguette and you are away, a nice little change for lunch.   

Serves 4 as a light lunch or two in great big baguettes

What you need:

1 lb of cooked shrimp

¼ cup chopped celery

1 ½ tablespoons fresh dill – chopped

½ teaspoon Tabasco sauce

¾   cup of light mayo

Juice of ½ lemon

How you do it:  

Cut shrimp in quarters, you want nice size pieces, not too small.   In a medium sized bowl mix shrimp with mayo, and dill.   Stir to combine the flavors.   Add the Tabasco sauce and lemon juice.   Pop the salad in the fridge until you are ready to serve it.
